Our patriotic no-bake cake is perfect for summer! Icebox cakes were originally created in the 1920s before people had refrigerators. Instead of baking desserts in the oven, they placed them in the icebox to set and harden. Therefore, you serve this no-bake dessert chilled, which is perfect for BBQs or summer picnics.

The cake has a luscious cream cheese filling and fresh blueberries and strawberries. And it has just the right amount of crunch, thanks to the nutty biscuit and graham cracker layer. The red, white, and blue colors are festive and fitting for the 4th of July (or any other holiday for that matter!).

We also love this dessert because you can prepare it ahead of your party. It only needs four hours to chill, so you’ll have plenty of time to prep. Once it’s made, you can store no bake recipes (well, some of them) like this one in the fridge for up to three days. All you have to do is slice, serve, and enjoy!

Ingredients for the No-Bake Dessert:

  1. In a medium-sized mixing bowl, combine the cream cheese and whipped cream. Stir gently with a spatula until they are mixed together.
  2. Add the sugar and vanilla pudding mix. Stir with the spatula.
  3. Slowly pour in a little bit of milk into the mixture. Be careful not to add too much, or else your mixture will become too runny. Stir until everything is smooth.
  4. Now, spread a layer of the cream mixture into the bottom of the glass baking dish. It doesn’t have to be too thick, just enough to cover the bottom.
  5. Layer your biscuits or graham crackers on top of the cream. It’s okay if you need to break some to fit the corners or crevices.
  6. Add another layer of the cream onto the biscuits. They should be completely covered.
  7. Take your strawberry slices and start layering them in your dish. We recommend placing a few slices upright on the edges. The strawberries in the center can be placed flat.
  8. Spread a layer of cream over the strawberries in the middle and then cover with a layer of biscuits and then another layer of cream.
  9. Take half of your blueberries and add them to the top.
  10. Cover the blueberries with one final layer of cream. You can use your spatula to make sure the surface is smooth and flat.
  11. Now decorate the top of your cake with the rest of the blueberries and strawberries. Feel free to get creative with patriotic designs!
  12. Once your no-bake cake is decorated, place it in the fridge to chill for four hours (or overnight). During this time, the biscuits will soften and turn into a fluffy cake-like texture. Together with the fresh fruit, rich vanilla pudding, and tangy cream cheese, it’s a dessert that is guaranteed to impress all your guests!
