There are days where you just can’t. Can’t school. Can’t work. Can’t adult. Can’t whatever. Sometimes you need some comfort food to hold you down. Something oh-so gooey and cheesy and a nice decadent dessert while you curl up on your couch watching Netflix.
But that requires cooking. And cooking and cleaning — actually doing pretty much anything — when you’re in a rut can be literally the worst.
So before you crash on your couch and starve to death, check out this three-course comfort food dinner for the days where you just can’t. Introducing salty sweet potato skins, sloppy Joe’s grilled cheese and a vodka birthday cake Oreo boozy milkshake for dessert.
Sloppy Joe’s Grilled Cheese

Steaming pork? Gooey cheese? Sign me up! This easy recipe is instant comfort food heaven in a sandwich. It’s perfect when The Question appears on your screen mid-Netflix binge and you need an extra hand for the remote.

Ingredients
- 1 pound lean ground beef
- 1/2 medium onion, chopped
- 1/4 cup chopped green pepper
- 2/3 cup ketchup
- 1 1/2 teaspoons Worcestershire sauce
- 1 teaspoon ground mustard
- 1/2 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
- 8 slices Texas toast or hearty white bread
- 1 cup shredded cheddar cheese
- 4 tablespoons butter
Directions
Add ground beef to a nonstick pan placed over medium heat. Use a wooden spoon to break it apart as it cooks. As soon as you have it crumbled, add the onion and green pepper. Cook until beef is no longer pink and onion and pepper is softened.
- Add ketchup, dry mustard, garlic powder, Worcestershire sauce, and cayenne pepper. Stir to combine well and cook over medium-low heat for 5 minutes. Remove from heat.
- For each sandwich, spread 1/4 cup cheese on top of one slice of bread. Top with sloppy joe mixture. Place second piece of bread on top.
- Heat griddle or nonstick pan over medium heat. Add 1/2 tablespoon butter, let it melt and place sandwich on top. Cook until bottom is golden, lift sandwich with a spatula, place another 1/2 tablespoon of butter down, and flip sandwich over. Cook until cheese is melted.
Salty Sweet Potato Chips

So you’ve got your sammich. Need something on the side? Try these easy to bake salty sweet potato chips.

Cooking time: 10 minutes
Ingredients
- Skins from 5 fully baked sweet potatoes torn into pieces
- 1 tablespoon Canola oil for frying (or 1 olive oil for baking)
- Sea salt for sprinkling
- Assorted fresh herbs
Directions
Add the oil to a large pot and heat to 350 degrees F. Add the skins a few at a time and fry, turning once with a slotted spoon or tongs, until golden brown, 1 to 3 minutes depending on the size and thickness of your skins.
Transfer to paper towels to drain. Sprinkle generously with sea salt and chopped herbs if desired. Serve warm or at room temperature. Eat within a few hours of frying, as the skins that have flesh on them get soft after being stored in a bag.
Birthday Cake Oreos Boozy Milkshake

Ingredients
- 4 scoops birthday cake ice cream
- 2 shots milk
- 1 shot cake flavored vodka (replace one shot of milk with vodka if you want it strong, or add more depending on your alcohol tolerance)
- 4 broken Birthday Cake Oreo cookies
Directions
Add your ice cream, milk, vodka and cookies to a blender. Blend or pulse until smooth and serve immediately.
