The Perfect Summer Ice Cream Sandwich RecipeÂ
We love this recipe because it’s easy to make and tastes just as good (if not better) than the original! Plus, it’s super easy to make and is the perfect dessert for a summer BBQ or party. All you need is a few pantry basics and your favorite store-bought or homemade ice cream.
Ingredients
- 1 cup White Flour
- ½ cup butter
- 1 egg
- ½ cup brown sugar
- 1 tsp baking soda
- ½ cup cocoa powder
- 1 or 2 gallons of ice cream (choose your favorite flavor and have it delivered from Target)

- Bowl
- Whisk
- Baking tray
- Pizza cutter
- Kitchen roller
- Plastic wrap
- Baking paperÂ
- Cutting board
- Fork
Instructions for the cookie
- We are going to start by making the cookies for our ice cream sandwich. In a bowl, add the egg and ½ cup brown sugar and mix with a whisk.
- Now add the flour, baking soda, and cocoa powder. Continue to whisk until the dough is thoroughly mixed (it should have a thick consistency).
- Cover the bowl with plastic wrap and let it chill in the fridge for an hour.
- Once an hour has passed, take out the dough and place it on a baking tray lined with baking paper. Use your roller to flatten the dough until it’s .5cm in thickness. Make sure to put another sheet of paper over the dough to prevent it from sticking to the roller!
- Take the Pizza cutter and make large rectangles in the shape of the cookies.
- With a fork, make small holes in each cookie.
- Bake in a preheated oven at 350 degrees Fahrenheit for approximately 10 minutes.
Instructions for the ice cream
- Now that the cookies are down, it’s time to put together our ice cream sandwiches! Grab your tub of ice cream and make sure it’s soft enough to scoop.
- Spread a nice, thick layer of ice cream (2cm thick) on a clean sheet of baking paper. The dimensions of the ice cream block should be one cookie high and four cookies in width.
- Place the sheet of ice cream back in the freezer to chill while you do the next few steps.
- If your cookies are still intact, gently cut them until they are separated from each other.
- Flip four cookies over to be used as the base of the sandwich.
- Remove the ice cream from the freezer and place the block on top of the cookies.
- Place the remaining four cookies on top of the ice cream block.
- Now, use a sharp knife to cut the ice cream into four individual cookie sandwiches. Don’t worry if the ice cream is uneven or overflowing out of the cookie. Trust us – no one will complain about having extra ice cream!
- The last step of this ice cream sandwich recipe is to wrap each sandwich with baking paper. We recommend placing them back in the freezer to harden and for the cookie to absorb the moisture from the ice cream. This will make them nice and soft, just like the ice cream sandwiches from your childhood!
Extra tip – feel free to experiment beyond the classic chocolate/vanilla combo! You can add sprinkles, chocolate chips, or nuts to the sides of your ice cream for more flavor and color! This is a fun way to include the kiddos. They’ll love decorating their own individual ice cream sandwiches!
