Pina Colada Energy Balls

They may not have any rum in them, but we guarantee you won’t notice or care once you taste how amazing these pina colada energy balls are! So, if you’re craving a taste of the tropics, then make sure to try these guilt-free pina colada snacks!
Ingredients
- 1 tbsp of honey
- 1 tbsp of coconut oil
- ½ cup of almond flour (or whole almonds)
- 1 cup of shredded coconut
- ½ cup of pineapple pieces
- ½ cup of cashew meal (or whole cashews)

Instructions
- The first step to making these pina colada snacks is to chop our cashews and almonds. If you already have ground almond flour and cashew meal, you can skip this step. In a coffee grinder, blend together the cashews and almonds until it’s a grainy flour-like consistency.Â
- In a blender (you can also use a food processor instead), add the pineapple pieces, honey, and coconut oil and mix together. It’s best to blend the wet ingredients first before mixing in the dry ingredients.
- After the mixture is thoroughly blended, you can now add the dry ingredients (cashew meal and almond flour) to the blender or food processor. Mix together until everything is blended – it should have a thick consistency.Â
- Put the shredded coconut in a bowl.Â
- Using a spoon or your hand, form the mixture into small balls. If the dough is too sticky, you can wet your hands to prevent it from sticking to your hands.
- Roll the ball in the shredded coconut bowl, making sure the entire thing is covered.
- Set aside on a plate, tray, or individual cupcake wrappers or silicone molds like we did in the video. You can also find them at Sur La Table, they sell very good quality kitchen utensils!
- After all the balls have been rolled in the shredded coconut, take your pina colada energy balls and place them in the refrigerator to harden. Let them sit there for 30 minutes to one hour before serving.Â
