Making lemon curd is a lot easier than most people think. And with its sweet, tangy, and refreshing flavor, it’s an extremely versatile ingredient that can be used for lots of desserts. Plus, it only uses a few simple ingredients which you likely already have in your pantry!
In this recipe, we’ll walk you through how to make lemon curd. Then we’ll share one of our favorite Easter dessert recipes that you can use with – lemon curd cookies!
Making Lemon Curd
Lemon Curd Ingredients:
- 3 lemons
- 3 eggs
- 2 egg yolks
- 220 g of sugar
- 100 g of butter
- 30 g of corn starch
Cookie Ingredients:
- 110g of butter
- 60g of powdered sugar
- 1 egg yolk
- Zest of 2 lemons
- 1 tbsp + ½ tsp of lemon juice (about 1 lemon juice)
- Salt
- 280 g of flour

- Mixing bowl
- Bain Marie or pot
- Whisk or hand mixer
- Baking tray
- Parchment paper
- Teaspoon
Making Lemon Curd Cookies – Instructions
- The first part of this recipe is to make the deliciously tangy lemon curd. Start by adding the lemon zest and lemon juice to a mixing bowl. Then, slowly add in the cornstarch. Set aside.
- Now, take the 100g of butter and cut it into smaller pieces. Add the butter to the Bain Marie and heat it up on the stovetop at a low temperature.
- Add the sugar to the butter and mix using a whisk or fork.
- In another small bowl, beat the eggs and egg yolks. Then add the eggs to the bain Marie.
- Finally, add in the lemon, lemon zest, and cornstarch mixture. It’s important that you keep the heat for the bain marie at a low temperature. If it gets too hot, then it’s possible that the eggs will curdle, which is not what we want!
- After a few minutes, you should have a mixture with a thick, cream-like consistency. At this point, you can turn off the heat.
- If you don’t want your curd to have chunks of lemon peel in there, you can sift it out. And there you have it! The lemon curd is ready, and we can move on to baking the cookies.
- To prepare for the cookies, you will need to cover your baking tray with parchment paper.
- In a bowl, beat the butter and sugar together until it’s white and has a thick, creamy consistency.
- In a separate bowl, add the egg yolk, lemon zest, lemon juice, and a pinch of salt. Mix together until it’s all combined.
- Combine the butter and sugar mixture with the egg and lemon mixture. Then, sift in the flour.
- Now, mix until you have a uniform dough. Once the dough is done, place the bowl into the fridge and let it chill for about 30 minutes.
- In the meantime, you can preheat the oven to 350°F or 180°C.
- Take the dough out of the fridge when it’s ready, and use your hands to make small, round, cookie-sized balls. Place each one on the parchment paper roughly ½ inch or 1cm apart.
- With a teaspoon, press down on the middle of the cookie to make a small indent. You can also use your thumb to do this as well.
- Bake the cookies in the oven for approximately 10 minutes. When they are done, take them out and let them cool.
- Now, spoon a bit of your lemon curd mixture into the indent of each cookie. Dust with some powdered sugar, and enjoy!
