Now you may be wondering, why butternut squash pancakes? Well, butternut squash is quite healthy for your baby. Fluffy Butternut Squash Pancakes:
Gather Your Ingredients:
- 3 1/2 cups (500g) Butternut squash (cubed)
- 1 ½ cups Pancake Mix (I used Hungry Jack)
- 2 tbs oil
- 1 egg
- ½ cup milk
- Bowl for mixing
Step by Step Directions:
Step 1 – Cut your butternut squash into small cubes. Bring a small pot of water to boil, then add your cubed squash into the boiling water. Boil for about 10-12 minutes till squash has softened.
Step 2 – While waiting for the butternut squash to boil and soften, add the pancake mix, oil, egg, and milk into a mixing bowl. Then mix your ingredients until you get a semi-thick batter.
Note:
If the batter becomes too watery, it will be difficult to achieve the thick and fluffy effect for your butternut squash pancakes. Too watery of a batter may also cause your pancakes to easily burn. Therefore, we highly recommend keeping your batter on the thicker side.

Step 3 – Once your butternut squash has finished cooking, and is soft, you can drain all the water from the pot and move the squash to a bowl. Once your squash is in a bowl, you can then start mashing all the cubes up. Mash mash mash till you no longer see cubes and your squash is one uniform substance.
Tip:
Save some mashed butternut squash for other recipes or snacks if needed. Mashed butternut squash alone is just as tasty for babies or kids. I usually save some to make butternut squash teethers.
Step 4 – Then, add the mushy butternut squash into the mixing bowl together with the pancake mixture, and get the griddle or a non-stick pan ready for cooking.
Step 5 – Scoop about ¾ of the mixture and start creating your pancake masterpiece!
Step 6 – Flip your pancake once you see bubbles forming. Cook for a few more minutes and VOILA! You have a yummy pancake to serve and some hungry bellies to fill!
