With just a few minutes on the stovetop or in the microwave, followed by a quick chill in the fridge or freezer, you’ll have a healthy and satisfying snack ready to go. Recipe for Chocolate Covered Blueberries

Ingredients

  • 1/2 cup of fresh blueberries
  • 1 cup of Greek yogurt
  • 1 tbsp of honey
  • ¼ tsp of vanilla extract
  • ½ tsp of coconut oil
  • 3.5 oz (100g) of dark chocolate

Materials

1. In a bowl, add 1 tbsp of honey, ¼ tsp of vanilla extract, and 1 cup of Greek yogurt. Mix everything together.

2. In a separate bowl, add the 1/2 cup of blueberries and 2 tbsp (or 1/8 cup) of the sweetened yogurt mixture. Mix together so that the blueberries are coated in the yogurt.

3. Line your baking tray with parchment paper.

4. Using a spoon, dish out clumps of the yogurt-blueberry mixture and place them on the tray. Make sure they are evenly spaced from each other. Clumps should be spoonful size, although you can also make them smaller (better for bite-size snacks!).

5. Place the tray into the freezer and let it sit for 2 to 3 hours or until fully hardened. This will make the chocolate covered blueberries easier to dip.

6. While the mixture is freezing, we can prepare the chocolate mixture. Break the dark chocolate bar into small chunks and add to a bowl. We will be melting the chocolate on a stove using a Bain Marie. If you don’t have one, feel free to microwave the chocolate.

7. Before heating up the chocolate, add ½ tsp of coconut oil. This will give the melted chocolate a smoother and more liquid texture, which we need for dipping.

8. Once the chocolate is melted, remove it from the stove and let it cool slightly.

9. Now, take the yogurt-blueberry mixture out of the freezer. Take one chunk and dip it into the melted chocolate with the tongs, making sure it is fully coated. Place the chocolate covered blueberry bite back onto the parchment paper.

10. Once all the bites have been dipped in chocolate, place the entire track back in the fridge. Cool for an additional 15 to 30 minutes. You can also place them in the freezer to chill (take them out 2 to 5 minutes before you plan on enjoying).

Instead of chocolate covered blueberries, try strawberries and chocolate for a winning combo! For this recipe, chop up 5 to 7 medium sized strawberries in the smaller pieces. Mix them with 1 tsp of sugar and a few drops of lemon before adding to the yogurt.

Cherries

You’ll need about 15 cherries – destemmed, pitted, and chopped into small bits. We also recommend adding 1 tsp of sugar and lemon juice before mixing with yogurt.
